Just preheat your oven to 450* if you are cooking in the oven (if you are cooking a casserole at another temperature and you want to melt cheese on top just cook it covered and when it's almost done put it under the broiler for a few minutes.) Vegan Gourmet ® is currently available nationwide, although not all stores carry it yet. If your local store or restaurant doesn't have the product yet, please ask for it! They can be frozen, shredded, but we do not recommend freezing the whole blocks as the texture changes and becomes softer (not as good for slicing and shredding).
