Angel’s Heavenly Vegan Cheesecake

1 ½ Cup              (ground) Health Valley® Oat Bran Graham Crackers
3 Tbsp                 Non Dairy Margarine (melted)
3 Tbsp                 Sugar
40 Ounces          Vegan Gourmet ® Cream Cheese Alternative
(5 - 8oz. Tubs)
1 Cup                  Vegan Gourmet ® Sour Cream Alternative
1 Cup                  Sugar
2 tsp                    Vanilla Extract
3 Tbsp + 1 tsp   Arrowroot Powder or Cornstarch


Grind graham crackers to the consistency of coarse flour.  Mix in melted margarine and sugar.  Press mixture into the bottom of an 8 or 9-inch spring form pan. 

Mix cream cheese, sugar, vanilla, and arrowroot powder together with an electric mixer until well blended.  Add sour cream and mix well.  Pour over crust. 

When cooking in an 8” pan, cook at 325° for 45 minutes.
When cooking in a 9” pan, cook at 325° for 35 minutes.

Cheesecake should be slightly browned and the center should be a little wobbly.  The cheesecake should be cooled for at least 6 hours or overnight.
